Sake brewery Imanishi seibei is situated in ‘Naramachi’, a location that still preserves many traditional buildings from the Edo (1603-1868), and Meiji (1868-1912) eras.
The name “Harushika” (written with the chinese character for ‘spring’ (the first character in ‘Kasuga’), and the character for ‘deer’),
which is simultaneously the name of this vendor's most popular sake and this store's trade name,
is said to have originated from the legend that the gods residing at Kasugataisha Shrine came riding on deer.
Since the opening of the brewery in 1884, the owners have continued to maintain a high quality of sake brewing in all aspects of taste, lushness and fragrance.
We have interviewed the 5th successor and company president, Kiyotaka Imanishi about the appeal of this sake.

Enjoying sake in a historical building

In the past, this building was partially used for the brewery of sake.
Here, it is possible to enjoy several varieties of sake for the price of only one 500 yen coin, making it a place favored by tourists.
For those who can't take alcohol, the store has an offering of sweets made with “Harushika” sake.
Moreover, during February it is possible to (on appointment) take a tour of the factory on Saturdays and Sundays, and learn about the process of sake brewery.

Traditional brewing

Moving up to the brewery on the second floor, the fragrance of steamed rice and malt fills the room.
In this cleansed area traditional sake brewing methods are observed, such as fermenting the malted rice in wooden bucket-like casks, in an attempt to preserve the most traditional methods of the art of sake production.

It goes without saying that many locals frequent this Sake cellar, but also with travellers is the popularity of this brewery at a rise.
“Harushika” has become a brand that is now exported, favored and enjoyed in over 10 different countries around the world. To name some, America, Korea and France are its major consumers.
This success is the result of the perfection of skill and passion in the production of sake since the establishment of this cellar, and the ingenuity in bringing this sake to the table of as many drinkers as possible.
